Vegan Apple Crisp
Gluten-Free and Vegan.
What You’ll Need:
FILLING
4-5 large apples
2 tablespoons coconut oil (melted)
1/3 cup coconut sugar
1/2 lemon, juiced
1 teaspoon cinnamon
TOPPING
1 1/2 cup gluten-free rolled oats
1/2 cup almond flour
1/4 cup coconut oil (melted)
2 tablespoons coconut sugar
1 tablespoon ground flaxseed
2 teaspoons pumpkin pie spice (or cinnamon)
1 teaspoon vanilla extract
pinch of sea salt
The Method:
Preheat oven to 350 degrees F.
Coat an 8x8 baking dish with coconut oil.
Thinly slice the apples and place in a large bowl with the rest of the filling ingredients.
Using a spatula, mix the apples until evenly coated. Transfer to baking dish and be sure to scrape the excess syrup from the sides of the bowl.
In the same bowl (not necessary to clean it), combine all of the topping ingredients and stir until thoroughly combined.
Pour the crisp topping over the apples and place in the oven for 45-50 minutes (until he top is golden brown and bubbling).
Remove and serve with coconut or greek yogurt, nut butter, or my favorite, vanilla ice cream.
