Chickpea Blondies

Gluten- and Dairy-Free.

What You’ll Need:

  • 1 can chickpeas

  • 1/2 cup almond butter

  • 1/2 cup maple syrup

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon baking powder

  • dairy-free dark chocolate chips

The Method:

  1. Preheat oven to 350°F.

  2. Drain and rinse the canned chickpeas.

  3. Place all ingredients, except the chocolate chips, in a high speed blender or food processor.

  4. Line an 8x8 baking dish with parchment paper or spray with coconut oil.

  5. Add in the chocolate chips to the mixture and pour into the baking dish.

  6. Bake for 25-30 minutes.

  7. Let cool completely. Place in refrigerator for 15 min to harden, remove and cut into squares.
