Baked Apple Boats

Gluten-Free.

What You’ll Need:

  • 1 Honeycrisp apple, halved and cored

  • 1/2 teaspoon coconut oil, melted (or use coconut oil spray)

  • 1/4-1/2 tsp ground cinnamon, to taste

  • 1/4 cup grass-fed Greek yogurt

  • 1 tablespoon nut butter (like almond, peanut, or cashew)

  • 1 teaspoon hemp seeds

  • 1 teaspoon cacao nibs

  • 2-3 tablespoons granola

The Method:

  1. Preheat your oven to 400°F.

  2. Cut the apple in half and remove the core using a spoon or paring knife. Place the halves cut side up in a small baking dish or on a parchment-lined baking sheet.

  3. Brush or spray the inside of the apple with coconut oil. Sprinkle generously with cinnamon.

  4. Roast for 20–25 minutes, or until the apples are fork-tender and slightly golden on the edges.

  5. Cool slightly for ~5 minutes before topping.

  6. Top each apple half with Greek yogurt and a drizzle of nut butter. Sprinkle with hemp seeds, cacao nibs, and granola.

  7. Serve warm and enjoy with a spoon!
