Watermelon Summer Salad
What You’ll Need:
4 cups fresh watermelon, cubed
1 cup feta in brine (I use Olympiana sheep feta)
1 cup english cucumber, peeled and chopped
1/2 cup tricolored grape tomatoes, halved
1/4 cup red onion, sliced
1 tablespoon fresh mint
Dressing
1 tablespoon extra virgin olive oil
2 teaspoons balsamic vinegar
1 teaspoon raw honey
1/2 lime, squeezed
1 pinch sea salt (I use Maldon)
freshly cracked pepper
*Can sub the balsamic vinegar & honey for 1 tablespoon balsamic glaze
The Method:
Cube the watermelon and feta, half the tomatoes, slice the red onion, peel and chop the cucumber.
Place all of the prepared ingredients into a large bowl.
Top with sea salt, freshly cracked pepper, and fresh mint.
In a separate bowl or jar mix the extra virgin olive oil, balsamic vinegar, honey, lime, until thoroughly combined.
Pour the dressing over the watermelon salad, toss and serve.
