Watermelon Summer Salad

What You’ll Need:

  • 4 cups fresh watermelon, cubed

  • 1 cup feta in brine (I use Olympiana sheep feta)

  • 1 cup english cucumber, peeled and chopped

  • 1/2 cup tricolored grape tomatoes, halved

  • 1/4 cup red onion, sliced

  • 1 tablespoon fresh mint

Dressing

  • 1 tablespoon extra virgin olive oil

  • 2 teaspoons balsamic vinegar

  • 1 teaspoon raw honey

  • 1/2 lime, squeezed

  • 1 pinch sea salt (I use Maldon)

  • freshly cracked pepper

  • *Can sub the balsamic vinegar & honey for 1 tablespoon balsamic glaze

The Method:

  1. Cube the watermelon and feta, half the tomatoes, slice the red onion, peel and chop the cucumber.

  2. Place all of the prepared ingredients into a large bowl.

  3. Top with sea salt, freshly cracked pepper, and fresh mint.

  4. In a separate bowl or jar mix the extra virgin olive oil, balsamic vinegar, honey, lime, until thoroughly combined.

  5. Pour the dressing over the watermelon salad, toss and serve.
