Autumn Massaged Kale Salad
What You’ll Need:
2 cups shredded kale, tightly packed
1/4 shallot
1/4 cup chickpeas
1/2 avocado
2 figs
1 tbsp pumpkin seeds
The Method:
In a large bowl, start by massaging the kale with your hands in a dressing of choice (I enjoy tahini, balsamic vinaigrette, lemon and olive oil, or apple cider vinaigrette on this!). Make sure you massage it very well (this helps break down the fiber in kale, making it easier for our bodies to digest).
Drain and rinse the chickpeas, if using canned, and slice the shallot, figs and avocado.
Add the chickpeas, shallot, figs, avocado, and pumpkin seeds to the bowl with the kale.
Give it a good toss until all ingredients are thoroughly combined and enjoy!
