Sugar Snap Pea Salad
What You’ll Need:
2 1 1/2 - 2 cups (~ 1 lb) sugar snap peas, chopped
3/4 cups chickpeas
3/4 cup cucumbers, chopped
2 tbsp fresh dill, chopped
Dressing (all approximate amounts - measure with your heart): 1/4 cup olive oil + 2 tbsp tahini + 1.5 tbsp red wine vinegar + 1 tbsp maple syrup + salt + pepper
The Method:
Rinse and dry all of the ingredients.
Trim the edges from the sugar snap peas, then thinly chop. Chop the sugar snap peas and place in a large bowl.
Finely chop the cucumbers and dill, and add to the bowl with the sugar snap peas.
Add the chickpeas (bonus points if you remove the skin) into the bowl with the rest of the ingredients.
In a separate small bowl, mix the ingredients for your dressing, to taste.
Toss all together until thoroughly combined, squeeze a bit of fresh lemon on top and enjoy!
