Eat Yo Greens Salad
What You’ll Need:
2 large handfuls of iceberg or butter lettuce, chopped
1/4 english cucumber
1/4 cup Castelvetrano olives
1/4 cup radishes, sliced
1/4 cup chickpeas (my crispy chickpeas are delicious on this!)
1/4 cup sugar snap peas
2 tbsp goat cheese
The Method:
Wash and dry all of the produce.
Chop the lettuce and sugar snap peas, peel and cut the cucumber, slice the radish, and crumble the goat cheese.
Place all ingredients in a large bowl.
Toss with my apple cider vinegar dressing and enjoy!
