Arugula + Blueberry Salad
What You’ll Need:
2 large handfuls arugula
1 piece grilled chicken (or protein of choice)
1/2 avocado
1/4 cup blueberries
1/4 cup walnuts
2 tbsp feta cheese
The Method:
Cook the grilled chicken to your liking (I season with salt, pepper, paprika, garlic powder, oregano and grill each side about 7 minutes).
Slice the avocado, chop the walnuts, and crumble the feta.
Place the arugula in a bowl. Top with the grilled chicken, avocado, walnuts, and feta cheese, and toss with Balsamic vinaigrette or dressing of choice. Enjoy!
