Arugula + Blueberry Salad

What You’ll Need:

  • 2 large handfuls arugula

  • 1 piece grilled chicken (or protein of choice)

  • 1/2 avocado

  • 1/4 cup blueberries

  • 1/4 cup walnuts

  • 2 tbsp feta cheese

The Method:

  1. Cook the grilled chicken to your liking (I season with salt, pepper, paprika, garlic powder, oregano and grill each side about 7 minutes).

  2. Slice the avocado, chop the walnuts, and crumble the feta.

  3. Place the arugula in a bowl. Top with the grilled chicken, avocado, walnuts, and feta cheese, and toss with Balsamic vinaigrette or dressing of choice. Enjoy!
