Mediterranean Chickpea & Chicken Sausage Skillet
What You’ll Need:
2-3 chicken sausages, sliced
1 can chickpeas
½ yellow onion, thinly sliced
2 cloves garlic (or 1 heaping tsp minced garlic)
¼ cup kalamata olives
½ cucumber
2-3 oz feta cheese
½ cup chicken broth
juice of ½ lemon (plus more to taste)
1-2 tbsp olive oil
Seasonings:
½ tsp dried oregano
½ tsp paprika
pinch of red pepper flakes (optional, for heat)
salt & pepper, to taste
optional: a pinch of cumin or za’atar for extra Mediterranean flavor
The Method:
Slice the sausage and onion, drain/rinse chickpeas, halve olives, dice cucumber, crumble feta cheese and measure your seasonings.
Heat 1 tbsp olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned (about 3-4 minutes).
Push sausage to one side and add onion. Cook 2-3 minutes until softened.
Add garlic, oregano, paprika, and red pepper flakes (if using). Stir for 30 seconds until fragrant.
Stir in chickpeas. Pour in chicken broth and let everything simmer for 4-5 minutes, until the broth reduces slightly and chickpeas are warmed through.
Stir in olives and lemon juice. Season with salt and pepper to taste. Simmer another minute to blend flavors.
Turn off heat and stir in half the feta cheese for a creamy finish, or sprinkle it on top if you prefer it crumbled (Optional: drizzle with olive oil or a touch more lemon juice).
Serve warm, topped with diced cucumber and extra feta cheese. Feel free to finish with fresh herbs (parsley, dill, or mint) or a sprinkle of za’atar or sumac to finish.
