Waldorf Chicken Salad

What You’ll Need:

  • 2 large skinless chicken breasts (~1.5 lbs/~2 cups shredded chicken)

  • 1/3 cup red grapes, quartered

  • 1/4 cup celery, chopped

  • 2 tbsp walnuts, chopped

  • 2 teaspoons parsley, chopped

  • 1 teaspoon fresh dill, chopped

  • 2 tbsp Primal Kitchen avocado oil mayo

  • 2 teaspoons fresh lemon juice

  • 1/2 - 1 teaspoon extra virgin olive oil 

  • 1/4 teaspoon red pepper flakes

  • salt, to taste

The Method:

  1. Place a pot of water on high heat and bring to a boil.

  2. Once the water is boiling, add the chicken into the pot and cook for ~12-15 minutes.

  3. While the chicken cooks, quarter the grapes and finely chop the celery, parsley, dill, and walnuts. Place in a large bowl.

  4. Remove chicken from water and pat dry with a paper towel. Using two forks, shred the chicken to your liking.

  5. Place the shredded chicken in the bowl with the rest of the ingredients.

  6. Add the mayo, lemon juice, olive oil, red pepper flakes and salt. Mix until thoroughly combined.

  7. Store in an airtight container and enjoy on salads, sandwiches, wraps or by itself!
