Turkey Chili

Yields ~6 servings

What You’ll Need:

  • 1 tablespoon extra virgin olive oil, more if needed

  • 1 lb. organic ground turkey

  • 1 (28 oz) can crushed tomatoes

  • 2 cups low-sodium chicken broth

  • 1 (15 oz) can black beans, no salt added

  • 1 (15 oz) can kidney beans, no salt added

  • 1 (15 oz) can corn, no salt added

  • 1 yellow onion

  • 1 red bell pepper

  • 2 cloves garlic

  • 3 tablespoons chili powder

  • 1/2 tablespoon cumin

  • salt, to taste

The Method:

  1. Chop the onion, bell pepper, and mince the garlic.

  2. In a large pot over medium heat, add the olive oil, onion, pepper, and garlic. Sauté for 3 minutes, stirring the vegetables so they don’t burn or stick.

  3. Add the ground turkey and break it up into pieces. While the turkey cooks, drain and rinse the canned beans and corn.

  4. When the turkey is no longer raw, but not fully cooked (think medium rare), add in the chili powder, cumin, and salt. Mix all together for about a minute.

  5. Add in the crushed tomatoes, chicken broth, black beans, kidney beans, corn. Cook for about 5 minutes on medium-high heat, stirring occasionally.

  6. Bring heat down to a simmer and cover for at least 40 minutes, adding salt and more seasoning, to taste.

  7. Once thickened remove from heat off and serve warm. Top with avocado, jalapeño, tortilla chips, greek yogurt or whatever else you may like.
