Lemon Blueberry Overnight Oats
Gluten-Free + Vegan.
Serves 2
What You’ll Need:
1 cup gluten-free rolled oats
1 cup unsweetened almond milk (or milk of choice)
1 cup frozen blueberries
1 tablespoon chia seeds
1 tablespoon fresh lemon zest
1 teaspoon maple syrup, optional
The Method:
In a jar, combine the rolled oats, almond milk, chia seeds, lemon zest, and maple syrup (if using). Stir until well combined.
Once combined, gently fold in the frozen blueberries.
Cover and place in refrigerate overnight, or for at least 6 hours, to allow the oats to soften and the chia seeds to thicken the mixture.
Enjoy cold and top with fresh blueberries, sliced almonds, a scoop of Greek yogurt, or an extra sprinkle of lemon zest.
