Lemon Roasted Asparagus
What You’ll Need:
- 1 bunch thick asparagus 
- 1/3 cup almonds, chopped 
- 1/4 cup olive oil 
- 2 lemons 
- 2 cloves garlic 
- 1 teaspoon salt 
- 1/2 teaspoon black pepper 
The Method:
- Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. 
- Trim the asparagus, mince or slice the garlic, and slice one lemon. 
- Cut the other lemon in half (you will be using the juice to coat the asparagus). 
- Place the lemon slices on the baking sheet, then cover the lemon with the asparagus. 
- Coat the asparagus with the olive oil, juice from one lemon, garlic, salt and pepper. 
- Place in the oven and cook for about 15-20 minutes. 
- While the asparagus is roasting chop your almonds, if they are not chopped already. 
- Once about 13 minutes have passed, spread the chopped almonds over the asparagus and leave until the asparagus is fully cooked. 
- Remove from heat and let cool for 2 minutes before enjoying.
