Lemon Roasted Asparagus
What You’ll Need:
1 bunch thick asparagus
1/3 cup almonds, chopped
1/4 cup olive oil
2 lemons
2 cloves garlic
1 teaspoon salt
1/2 teaspoon black pepper
The Method:
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
Trim the asparagus, mince or slice the garlic, and slice one lemon.
Cut the other lemon in half (you will be using the juice to coat the asparagus).
Place the lemon slices on the baking sheet, then cover the lemon with the asparagus.
Coat the asparagus with the olive oil, juice from one lemon, garlic, salt and pepper.
Place in the oven and cook for about 15-20 minutes.
While the asparagus is roasting chop your almonds, if they are not chopped already.
Once about 13 minutes have passed, spread the chopped almonds over the asparagus and leave until the asparagus is fully cooked.
Remove from heat and let cool for 2 minutes before enjoying.
