Autumn Roasted Carrots
What You’ll Need:
1 lb tri-colored carrots (I do not peel or cut them!)
2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
1 large sprig fresh rosemary
½ teaspoon dried thyme
2 cloves garlic, minced
The Method:
Preheat your oven to 400°F.
Line a baking sheet with parchment paper and spread in a single layer on the baking sheet.
Coat the carrots evenly with olive oil, salt, pepper, rosemary, thyme, and minced garlic. Use your hands to ensure all ingredients are spread on each carrot.
Roast for 1 hour, stirring once or twice, until tender and slightly caramelized.
Serve warm and enjoy!
