Greek Style Chicken Thighs

What You’ll Need:

  • 1.5 lbs bone-in, skin-on chicken thighs (~4 thighs)

  • 1/2 cup extra-virgin olive oil

  • juice from 1/2 large lemon

  • 1 tablespoon minced garlic (~1-2 cloves)

  • 1 teaspoon dried oregano leaves

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1/2 teaspoon paprika

  • pinch of red pepper flakes

The Method:

  1. Preheat the oven to 400 degrees F.

  2. Mix the extra-virgin olive oil, lemon juice, and spices in a small bowl. Place the chicken thighs in a shallow dish.

  3. Pour the marinade over the chicken thighs and evenly coat. Let marinate for at least 15 minutes.

  4. Place a large, shallow, oven-safe pan on medium-high heat.

  5. Once hot, add the chicken(skin side down) and pour over the marinade.

  6. Cook the chicken on each side for about 4-5 minutes.

  7. Place the chicken thighs skin side up and put the entire pan in the pre-heated oven for 35-40 minutes.

  8. Remove from oven and let cool. Just before serving squeeze some lemon on top and sprinkle some dried oregano.
