Blueberry Baked Oatmeal
Gluten-Free + Vegan.
What You’ll Need:
DRY
2 1/2 cups gluten-free rolled oats
2 tablespoons ground chia seeds
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 cup blueberries, more for topping
WET
2 eggs (can sub with flax eggs, if vegan)
1 cup almond milk
1/4 cup maple syrup
1/2 tsp vanilla extract
The Method:
Preheat the oven to 350 degrees F.
In a large bowl, crack and gently whisk the eggs.
Add all of the wet ingredients into the bowl with the eggs.
In a separate bowl, mix all of the dry ingredients.
Once thoroughly combined pour the dry ingredients into the bowl with the wet ingredients.
Fold the dry ingredients into the wet ingredients with a spatula.
Line a baking dish with parchment paper or spray with coconut oil.
Pour the oatmeal mixture into the baking dish and bake for 25 minutes.
Remove from heat and let cool for 5-10 minutes before serving.
