Peanut Butter Blondie Bars

Gluten-Free.

Makes 9 squares

What You’ll Need:

  • ¾ cup mixed gluten-free flour + almond flour (all I had left! you can use all gluten-free or all almond flour)

  • ½ cup peanut butter (the more natural/runny, the better)

  • 2 pasture-raised eggs

  • 2 tablespoons coconut oil, melted

  • ¼ cup maple syrup

  • 2 tablespoons non-fat Greek yogurt (can substitute coconut yogurt, if dairy-free)

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder

  • 3 oz. (Unreal brand) Dark Chocolate Peanut Gems, optional: roughly chopped

  • Maldon flaky sea salt, for topping

The Method:

  1. Preheat oven to 350°F.

  2. Line an 8x8-inch pan (or small loaf pan for thicker bars) with coconut oil and/or parchment paper.

  3. Whisk together the peanut butter, eggs, coconut oil, maple syrup, Greek yogurt and vanilla.

  4. In a separate bowl, mix the flour and baking powder. Pour the wet peanut butter mixture into the bowl with the flour and baking powder.

  5. Fold in about ⅔ of the chopped peanut gems.

  6. Spread batter into pan. Top with remaining gems and sprinkle of flaky sea salt.

  7. Bake for ~30-35 minutes, checking halfway, until the center is just set.

  8. Cool completely before slicing. Enjoy!
