Banana Oatmeal Breakfast Cookies

Gluten + Dairy-Free.

What You’ll Need:

  • 2 overripe bananas

  • 1 egg

  • 1 - 1 1/4 cup gluten-free rolled oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1/4 cup chocolate chips

  • pinch of sea salt

The Method:

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.

  2. In a large bowl, add the bananas and mash.

  3. Add the egg and mix until the banana and egg are thoroughly combined.

  4. Add the rolled oats, cinnamon, baking powder, chocolate chips, and pinch of sea salt. Stir until combined.

  5. Place about 2 tablespoons of cookie mixture on the baking sheet about 3 inches apart.

  6. Bake for ~12 minutes.

  7. Enjoy warm and store in an airtight container in the fridge for up to one week.
