Tuna Salad

What You’ll Need:

  • 1 can Albacore white tuna (I use Wild Planet Foods , no salt added)

  • 1/2 avocado

  • 1/2 lemon, juiced

  • 1 tbsp mayonnaise (I use Primal Kitchen Foods avocado oil mayo)

  • 1 celery stalk, chopped

  • 1/4 honeycrisp apples, chopped

  • 1 tbsp red onion, chopped

  • salt, to taste

  • pepper, to taste

The Method:

  1. Chop the celery, apples and red onion. Place in a small bowl.

  2. Mash the avocado and add to the bowl with the chopped ingredients.

  3. Drain the tuna and flake with a fork. Add to the bowl.

  4. Add the lemon juice, mayonnaise, salt and pepper. Mix all together with a fork until thoroughly combined.

  5. Taste and adjust, as needed. Store in the refrigerator in an airtight container for up to 2 days.
